Pepe Rosa was born from a single, stubborn idea — that the soul of Italian cooking belongs in Kolkata, unhurried and uncompromised. Our dough rests for forty-eight hours. Our mozzarella is pulled the morning it's served. Our pasta is rolled by hand, every plate, every night.
